Spicy Chicken Sandwiches

I eat pretty healthy, but I give myself a fair amount wiggle room to indulge because I just love food. I rarely eat fast or fried food, but do make a lot of healthier versions at home. Even by using similar ingredients, I find I can really healthify a meal if I make it myself.

This is one of those healthified fast food recipes.

I love it because it’s easy, quick to whip up, delicious, inexpensive, and healthy (ish).

Here’s one of my favorite weeknight recipes, the Spicy Chicken Sandwich.

Spicy Chicken Sandwiches

Delicious, lightly breaded chicken sandwich packed with flavor and a touch of spice. A perfect and quick weeknight meal that is completely customizable. 

Cook Time 15 minutes
Servings 4 people

Ingredients

  • 2 chicken breasts cut in half
  • 3 tbsp buffalo sauce
  • 1 tsp dried oregano
  • pinch salt
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp olive oil
  • 2 tbsp mayonnaise
  • juice of one lime
  • 1 tbsp cilantro
  • 1/2 tsp garlic

Rolls, arugula, and red onion

Instructions

  1. Combine the buffalo sauce, oregano, salt, and egg. Marinate the halved chicken breast in the mixture overnight.

  2. Heat olive oil over medium high heat on the stove. Remove the chicken from the marinade, keeping a little of the sauce on the chicken. Cover all sides of the chicken in breadcrumbs, then place into the hot olive oil. Cook for 5-7 minutes on each side, or until chicken is done and breadcrumbs are golden brown.

  3. Combine the mayonnaise, lime juice, cilantro, and garlic in a bowl. Use as sauce for sandwiches. Serve on a club roll with lettuce and red onion.

Recipe Notes

  • My husband likes his spicy, so he skips the cilantro lime mayonnaise sauce and uses extra buffalo sauce.
  • Delicious served with an arugula salad with lemon olive oil vinaigrette and feta cheese.
